The 3 stands for the three grapes: Primitivo, Negroamaro and Sangiovese. Rosso for red and the Passo for the special way in which this wine is made, called Appassimento. Here the grapes remain on the vines as long as possible, resulting in a much higher sugar content . After the grapes have been picked, they are dried in special crates. By drying, the grapes lose a large part of their moisture and the result is a high concentration of sugar and aroma. This is also the basis of the very tasty Appassimento wines. The 3 Passo Rosso is deep red with garnet tones, intense and mature fruit, with tones of oak. It is rich and has overripe fruit, with soft oak hints. And more importantly, it is very popular. Goes excellently with southern and winter meat dishes such as a venison stew, beef stew with pumpkin, but also a vegetarian melanzane con parmigiana.
